I've been a professional chef for 23 years. I have a ceramic grill and routinely do Neapolitan style pizzas, making dough from scratch. I've done deep dish, NY style, you name it. On paper, I'm someone that shouldn't be ordering a pizza crust kit.
That being said, I also have 3 girls, 2 businesses, and a google calendar that never ends. So when it comes time for pizza night, I just don't have it in me to use my brain. Enter: Prepa Pizza.
I love that they have you make a poolish the night before (or morning of). The flavor development from that is crucial. Simply dump 1 packet of dry ingredients, water, plus the honey packet and yeast packet, mix, and put in the fridge.
Next day was just mixing in the rest of the dry, kneading (mixer or by hand), letting it rest, then stretching it and making the pizzas.
Verdict - Amazing crust. Even in a home oven at 500 degrees, this turns out better than any pizza in our city, and as good if not better than when I do it myself from scratch. I'd much rather spend a little money on a foolproof amazing crust and use the rest of my brainpower/manpower for toppings and other stuff (tonight was sautéed shaved brussels sprouts and red onion with maple, gruyere, goat cheese and balsamic).
So I guess take it from someone who knows what real pizza dough is. It's THIS. I'll be ordering and keeping in the pantry so pizza night can happen more often!
